GF Microwave Cookie!

Ever get that massive craving for a chocolate chip cookie yet don’t want to make a whole batch or go out and buy a whole box just for one cookie? I think we all have that feeling at one time or another, no matter how healthy you are trying to be.

Well I discovered a solution to this the other day that I wanted to share with you. The single serve microwave chocolate chip cookie! It’s super simple to make and only takes about 5 minutes. I found the recipe on YouTube (link here) and thought why not give it a try.  It worked so well and tasted delicious and just like a big gooey cookie! In the original recipe they used mini m&m’s but instead of those I used dark chocolate chunks. Also I used gluten free flour thus making it a gluten free cookie.

1 tbsp of butter

1 tbsp of soft brown sugar

1 tbsp of white sugar

1 egg yolk

3 tbsp of flour (I used gluten free flour)

Couple drops of vanilla essence

Pinch of salt

1 ½ tbsp of chocolate chips/chunks

1 small ramekin (I used a Le Creuset one)



In a small ramekin place the butter and with a spoon or small spatula cream it until it is smooth, then add the white and brown sugar and cream it all together until it is well mixed and smooth. Add the egg yolk, vanilla and salt and mix well.

Make sure there are no lumps in the mixture before you add the flour slowly.

Slowly add the flour and mix until it is all well incorporated.step 3

Then finally stir in the chocolate chips and add some extras on top.

Step 4

Place the ramekin in the microwave and microwave the mixture for 45-75 seconds on high. The longer you cook it the more well done it will be so if you want a soft gooey cookie then do about 45 – 60 seconds.
